Latin Chicken & Rice Casserole (Cuban style Arroz Con Pollo)
This recipe is adapted from an ex-boyfriend's recipe for a Cuban version of Arroz con Pollo. Seasoned chicken with bell peppers, onions, black beans and rice. This casserole is great with other veggies such as carrots, corn and celery too. I use a combination of white and brown rice, left over from a previous meal. This dish is easy to double up and freeze smaller portions to heat and serve for an even faster weekday meal.
Most vegetables will work with this recipe. If you have leftover sauteed cauliflower, corn, peas, etc. just add the already cooked veggies to the recipe.
